How to make Elderberry syrup (potent cold and flu remedy)

Benefits of Elderberry
Black elderberries (Sambucus nigra) have been shown to help avoid cold/flu and speed recovery for those who already have them. Elderberries are naturally rich in vitamins, micro nutrients, antioxidants and compounds that stimulate the immune system.
Elderberry syrup provides the concentrated immune-supporting benefits of black elderberries in a delicious way. This homemade recipe uses fresh elderberries with herbs like cinnamon and ginger, plus honey for an extra immune boost. You can replace honey with agave, maple syrup, sugar or some other sweetener.

Ingredients
· 3 cups water
· 1 cups fresh or frozen elderberries
· 2 tbsp ginger (grated)
· 1 tsp cinnamon
· ½ tsp cloves (ground or whole)
· 1 cup raw honey
Recipe:
Add water, elderberries, ginger, cinnamon, and cloves into medium pot
Bring to a boil and then cover and reduce to a simmer for about 45 minutes to 1 hour until the liquid has reduced by almost half.
Remove from heat and let cool until it is cool enough to be handled.
Pour through a strainer into a glass jar or bowl mashing the berries in process and squeezing every last juice from them
When it is no longer hot, add the honey and stir well.
Pour the syrup into a mason jar or glass bottle.
Store in the fridge for 2-3 weeks, larger quantity can be frozen for months and defrosted as needed. If freezing don’t use glass jars, ice cube makers or small plastic bottles are better option. We recycle the honey plastic bottles.
Note:
Take daily for its immune boosting properties. Some sources recommend taking only during the week and not on the weekends to boost immunity.
Standard dose is 1 teaspoon for kids and 1 tablespoon for adults. If the flu does strike, take the normal dose every 2-3 hours instead of once a day until symptoms disappear.
